i want to do this manually, how do i disable iphoto/preview from trying to capture my images.

Launch Image Capture and in its preferences you can set it so that no application (or the one you want) launch when a camera or card reader is connected to the computer. For some reason Apple put the controls for that in IC and kept it a secret.
