I carry my macbook pro around quite a bit and shut it down when I do so. But I hate reopening all the applications and their open windows every time I start up again.

Is there a software that will do this?

Well, I am a heavy bike rider and don't like the idea of my laptop being powered on while I am riding.

Since Leopard has Safe Shutdown (is that the name of the feature?) to enable OS switching, there may be a way to get it to go into Safe Shutdown but stay on the OS X side instead of switching to Windows upon next boot.

While I don't think sleep is a bad option, Naplander has the right solution to your question. Go into System Prefs, open the Accounts pane. Under your account select Login items. Drag and drop into the Login Items area any application/document/or server you want to open when you login. Then all will be as you want it...

Your laptop is not powered on in sleep mode. Only the RAM is getting power, and your laptop going over some bumps is not going to hurt that. The hard drive is fully parked in sleep mode.

Sleep mode is perfectly safe for biking.

There's an option we can set via Terminal to prevent sleeping portables
from waking, if the case gets jarred open somehow. The command is
pmset, and the option is lidwake. I have mine set for "all" conditions
(both battery and when plugged in), but we can specify one or the other.

For example...

sudo pmset -b lidwake 0

...should prevent waking by opening the case, while the battery (-b) is active.
[We would need to type a key, like the spacebar, etc., to wake it.]

Just type pmset -g to see the current settings, or man pmset to learn more.
