I'm now the proud owner of a new MacBook Pro, That being the case is there any special steps required to deauthorize/de-activate CS3 on my Macbook? Or will the installation process work like windows and I'll be required to call adobe to get a special code.

Just deactivate it on the MacBook before you try to activate it on the MacBook Pro. (Help > Deactivate)

Does Adobe not allow you to use their applications on more than two computers? If so, is there a workaround so you can use it on more than two computers?

Thanks that did the trick  I was looking for some sort of uninstaller

Yes a desktop and a laptop provided you don't use them at the same time. I already have CS3 activated (and used) on my Macpro and I needed to deactivate on my MB so as to be able to use it on my new MBP
