Problem with Document Colour Mode : Illustrator CS3

	I have a file supplied as a PDF that I need to open into Illustrator and save again as an EPS. So: I open the pdf > save as > select the EPS option. Problem: when I then open said file into Illustrator (CS3) the Document Colour Mode in the resulting document is in RGB mode, as opposed to CMYK. This causes a problem as all areas of black convert to "rich black" mode whilst I simply want 100%K Anyone know how I can work around this?
