I have a lot of folder and playlists in my itunes library. It looks perfect and organized.
Now I have put the library on a small Windows Fileserver and shared the library.

Now I can see only the long list of files except all the playlists and folder.

Is there a way to share the whole folder / playlist tree ? Is there some h4x or something ?

Yes. It's an option in iTunes' sharing preferences.
