I am using Adobe Acrobat ver.8;

I need (on occasion) to Export Adobe Acrobat files and then edit in Illustrator;

does anyone know the essential differences between Exporting (>Postscript) and then selecting Postscript as opposed to EPS? The former (ie PS) file is much larger but seems to give more reliable results –it could be just my imagination of course!

Just go into Illustrator and open the PDF from there. No need for import / export.
