At what resolution should I scan them, and how do I correct the color? Thanks!

Peeb - you'd do well to have a Google, I think. There's a wealth of information out there, and you've not given us much to go on. The resolution you scan at, for example, depends mainly on what you're going to do with the beasties once you've scanned them!

I won't trawl through all of my bookmarks to find something relevant, but here's one link that should get you started and inform your googling:

Vuescan's a nice bit of software if you're not sure what you want to use software-wise, BTW.

You'll want to scan 35mm slides and negatives at the highest resolution you have, and medium and large format transparencies and negatives at as high a resolution as you can handle-the files from these will be huge.

Color correction is something that most scanning software handles, especially color inversion. So, as all2ofme says, hit Google up for lots of possibilities. VueScan is a good choice in my opinion.
