This isn't necessarily JUST mac pro specific, but I own a Mac Pro and i'm having the issues (along with the other person i'm trying to video chat with who has a MacBook Pro and a Mac Pro).
I got my Camcorder and Mic setup on my system (because my iSight hasn't arrived from ebay yet) and it worked fine in photobooth. I recorded videos and it was all good. So I wanted to give video chat a try. So my buddy (we are both on comcast high speed internet with 12 Mbps++ connection speeds) was on his Mac Pro at the time accepted the video and it was good for a couple seconds and it froze. We tried to do a one way video conference and it froze after a couple seconds EVERY TIME (i think it seemed to freeze when someone would type in the chat window, but i'm not exactly sure that triggered it). So he/we thought it was me being it was a Sony DV camera and a bluetooth headset (now keep in mind that when we did a audio only chat it worked fine. Audio came through CRYSTAL clear) that wasn't made for apple. So he got on his MacBook Pro and as you all know it has the apple iSight built into the notebook. So we tried doing a one way video chat where i was looking at him. We had the SAME problem. The video would freeze after a couple of seconds.
What could be causing this. I tried changing the bandwidth settings around. Is there anything else in preferences we need to use or is iChat just NOT that great at video chat (even though mr. black long sleeve shirt guy on the apple ads does it perfect). Is there another freeware program for osX that we can give a try to see if it's the program.
By the way we are both running osX Leopard 10.5.2 fully updated.

Have you repaired disk permissions? Try that first (with Disk Utility [Finder>Applications>Utilities]). I've had similar issues before, except they were fixed when my buddy updated to 10.5.2.
iChat is great at video chatting, not only with Apple employees

I haven't been able to use iChat AV with my new MacPro either. My iSight works fine on my old G4 running 10.4.8 but it doesn't like the new computer. I don't know if its firewire port thing, 8-core thing, or a Leopard issue, but after posting in several forums I still have no answer. I get a couple minutes of good audio/video then the video hiccups a few times and the audio delays just keep increasing until its unusable. Plug the iSight back into the G4... and its fine. So for now the ol'G4 has been the dedicated iChat station. Waiting to see if this widespread or just an issue with my computer alone.
Repairing disk permissions didn't help here. One of the Mac Geniuses said to change the bandwidth setting, but that didn't help either.

I have the same issue, although mine is between my MBP and a friends aluminum imac. Both of us are also on comcast. The video fragments and freezes after about a minute. Although it works fine in yahoo (yahoo video chat isn't all that good though, and there's no sound as far as I can tell so it's not really useful either). Maybe it has something to do with comcast throttling upload speeds?

Mercury Messenger (an MSN client) does video chats, as does aMSN, so you could try those to see if it is iChat specific or video chat specific.
