I have happily synched bookmarks, addresses etc. between three Intel machines but am unable to persuade a G5 to do the same. Shows as having been done but it hasn't - what might I be doing wrong?

Probably nothing, but I would choose to Reset Sync Data... on that G5 and select .Mac as the source. This will overwrite everything again (though you might also want to read the link below first).
