I want to use a scanner to scan pages out of books and then extract the text. I assume this is possible. What are your hardware and software recommendations?

This is called optical character recognition (OCR for short). Some scanners come with support (it should say on the box), but otherwise you can use VueScan with any scanner. Obviously, higher-quality scans will get you better results.
