Let's say I have a DVD of music videos (Massive Attack). How would I rip said videos individually so that I can create my own personal music video library to be viewed via iTunes and apple TV? Is Handbrake my tool of choice?

From the presets sidebar, pick Apple TV. The Handbrake developers have already figured out the best combination of settings to use that the Apple TV can handle.

Great, got it working with the Apple TV preset. Thanks! Got another handbrake question: Can I use handbrake to burn my copies of DVDs? I know I can make the copy onto my hard drive, but what about burning it back onto another DVD? Or is that Toast or iDVD or something?

DVD2OneX is an easy way to copy DVDs on OS X.
