Smultron and TextWrangler are both free so I would start with them if the others mentioned here so far are not. Fwiw, imo Nvu is a waste of time as it is incredibly buggy.
I would also try out Taco or TextWrangler because they're free. But if you're looking for a long term use, and don't mind spending a little money I would go with TextMate
