What presentation software does Apple use in their store workshops?

I popped into the Regent Street store in the UK and stumbled across a workshop being run upstairs about the iPhone. What I would like to know is what software do they use when showing the live video feed of what they are doing? I'm a Teacher and would love to be able to show work instantly through the projector to the class without having to scan it in etc.
Any ideas of similar products? Sorry if this has been discussed before but I'm a bit of a newbie!!

I would guess Keynote. What do you mean by a "live video feed" in the presentation? If it's from the web, it can be included directly in the presentation.

If you're talking about seeing what they're doing on the screen of their computer, the "live video feed" is just a projector connected to the Mac.
Any projector will *immediately* be recognized and just work. It is treated just like any other monitor.
You can choose whether to mirror the internal display or have the projector be treated as additional desktop space (called "spanning" mode) in the System Preferences' monitors pane.
There is no specialized software involved.

I think he's talking about visual presenters like the Elmo ( http://www.elmousa.com/). I haven't seen their demos so I don't know if they are integrating the video feed into a Keynote presentation or just changing video inputs.

Sorry my explanation wasn't very clear - using the wrong terminology I guess.
Yes - the last post looks like what I'm after. They had an iPhone being used by the presenter and it was displayed in the presentation in real time so you could follow what was being pressed etc. The Elmo looks interesting and I have Keynote so will dig around to see how I do it.

There is no officially supported/documented method of displaying the contents of the iPhone screen on an external display.
Apple is using a custom-built in-house solution with modified iPhone systems.

As the OP confirmed, that's not what they're doing. They are embedding a live video feed from an Elmo into a Keynote (or similar presentation software) demo. They aren't using video out from the iPhone like Steve does during keynotes.
The OP is wanting to know how to embed live video into a Keynote or similar presentation.

As I recall when I was there, Apple did NOT have the video feed integrated into Keynote, it was a simple custom application that took the FireWire output from an HDV camcorder and showed it on the Mac in full-screen (and that's it, no options or other features of any kind).
