Photoshop CS3 down to crawl speed

After working in Photoshop for about 2 hours, everything slows down.
I just tried to use the quick selection tool on a small 5mb file. It took 5 to 7 seconds, and I had to look at the watch. When I change the view percentage, I get the tiling, opening a 250Mb image can take up to 30sec (a layered Tiff file).
I have a white 24" iMac with 3Gb RAM, 2 Gb RAM for Photoshop (so a recommendation I got from a book).
Activity monitor: CPU useage goes up to 90% with 1Gb real memory during selection process with quick selection tool, . 15threads, virtual memory 1,9 Gb in Photoshop alone.
Weird thing: when I watch the ants of the selection march, CPU percentage changes, between 20 and 35% even when I do nothing, and then - suddenly it shot up to 95% (still in the Photoshop department) for a moment, even though I wasn't doing anything.
Bridge: 113mb real memory, 800mb virtual memory.
Free disc space 28Gb.
I can't see anything on the activity monitor that explains the slowdown.
iTunes was running, and is now stopped in the background. I have a weird feeling that iTunes is responsible for some reason. It only starts when I open iTunes while working.
But I could be wrong.
Could it be what's called a "memory leak"?

If it was a memory leak I guess a restart would fix it. Then I think 28 GB is enough free disc space how to be worried about it. As for iTunes I don't use it so I can't say I had to blame it. Sorry.

repairing permissions does nothing. Back in 10.0 and 10.1 it was needed now, its more myth then fact.

What exactly to you mean?
I am on CS3, which is in version 10.0.1. I just checked the updates available, and there aren't any.
The strangest thing of all this slowdown is that it only happens after several hours of Photoshop work, probably after 4 hours.
Could Bridge be involved in this? Bridge CS3 is not the most reliable application, which is why I just bought Expression Media 2 (the former iView Media Pro).

By 10.0 and 10.1 Maflynn means the early versions of OS X
What else is using RAM up? InDesign munches RAM up.

I don't have InDesign. When I work in Photoshop I usually have Bridge open ( I posted its RAM/disc useage above), iTunes for the mood, that's it. RAW processors I usually close.
I checked the activity monitor while performing tasks. I perceived sudden bursts of CPU useage by rather simple tasks like the "marching ants".
If you have iTunes on - could it block a whole core (I only have two here)?
What is really weird is that this only happens after hours of Photoshop work (4 hours, or more).
