No, I’m not aware of any ripping program that produces metadata. DVD ripping, since it’s technically illegal in most of the world, does not have the support of any large companies and is thus nowhere near as easy to accomplish as ripping CDs. It’s also massively slower than ripping CDs.
On the Mac, the biggest program for ripping DVDs is HandBrake, which must be coupled with VLC to decode commercial DVDs. There are some easier to use tools, but I like HandBrake’s output quality.
As for speed: at full quality, ripping a 2 hour movie on my 8-core Mac Pro (2008) takes around 1/2hr. On a typical dual-core Mac, count on ripping taking the same amount of time as playback (i.e. 2h for a 2h movie).
