How about a saved search with "pdf" as the type and nothing in the search query box (you gotta type something in the spotlight search box in a Finder window to begin, then select PDF, then delete the text in the search box and save the spotlight search).

I'm almost positive I want some form of tagging option.
Yep! doesn't seem too shabby. Investigating this it's kind of ridiculous there's no tagging system integrated into the OS.

I'm thinking the biggest problem I have doesn't quite have a solution.
PDFs are updatable. I need something which will gracefully deal with this (get rid of the old copy, transfer the metadata to the new copy).
