Hey..I work at a magazine in upstate New York, and I'm about to start in the production department. I need to know about color management, specifically understanding color profiles and being able to accurately reproduce color on different printers. Does anybody know of a good book or other resource to learn about this?
I checked out Adobe's Training forums already....they're not bad, but I want something that goes a bit more in-depth.

I've seen one of Andrew Rodney's seminars and it was very enlightening.
I also highly recommend the book "Photoshop Color Correction" by Michael Kieran. It doesn't have much about ICC profiles specifically, but its a great book.
It seems to me that many people don't quite understand color management (myself included); most shops just have a set of procedures that work for them.

Yeah, I'd tend to agree. Even the senior designer and the preflight guy at the magazine where I work don't know about it. They just set everything they're suppossed to set where the people at Banta tell them to, and then wonder why colors come out undersaturated and dark....
Too many people thinking they can get by only knowing how to do their specific part of the job. I want to know how to do the job of the guy above me and the guy above him.

Check out Bruce Frasers "Real World Color Management". More than you'll ever want to know.
Color management is a huge topic. You might also want to subscribe to Apples Colorsync Users mailing list. But some of it makes my head hurt javascript :smilie(' ')
