Care to give any more info on what iFold does? I might be interested if I knew a bit more about it.

iFold gives a friendly GUI to the command line client of the distributed research project Folding@Home. Folding@home aims to use the vast resources of wasted personal computer time unused to determine the manner in which proteins fold (this in turn will allow the development of drugs more specific to their need in the body).
I was looking for someting with molecules, but wanted to stay away from DNA as Folding@home is used to look at many types of protiens and amino acid chains.
I hape that helps. Check out Folding@Home Site for more info if you like.

I would like to take a stab at it... I just need to find some acceptable OS X icon building tools.
