Scott Kelby is poised to release at least one Photoshop 7 book in the next month or so. I would highly recommend any of his books. Also be on the look out (and preorder) the Photoshop 7 Wow! Book.

... Due out shortly after Photoshop 8.5 is released!

I swear the WOW books are nice but they're allways published WAY late.

Adobe sells their own books... they aren't bad for most things...

If you need it today, get a 6.0 book. 95% of what you learn will translate perfectly.

For professional results, and professional advice, the REALWORLD series of books (for all the design apps like Photoshop, Illustrator and Quark) were the best reading I've had from these feature and instruction books.

It makes a fairly good reference, too. Although there may be better 'reference only' books around.
