The formatting option of RAW on my digital camera is completely alien to me. I was hoping that it would save me from the horrible JPEG compression which, unfortunately, is my only other option.

However, when I take the file into Photoshop, it tells me it can't read it (never mind that it can save in this format)

How do I view these files?

Try Graphic Converter or Debabelizer. Between the two you can open just about any graphics format on the planet.
