I think the Apple company had opened 25 to 40 mini apple stores in many mall lately.

I've noticed many new stores added in http://www.apple.com/retail/ and how the *@#$ am I supposed to know when they're opening? I mean, isn't there a site that keep us updated where and when the new apple stores will be opening?

Yep that works. Apple will also announce when the new stores are going to open.
