I'm selling an old S/E T610 on eBay and I'm wondering if I'm supposed to take out the SIM card or not.

Yes.
There might be data on it you don't want to pass on.
Besides, anyone who wants to use the phone needs a new SIM card anyways.

Your SIM card is your contract, basically. That's what lets your network know who you are, what your number is, and whom to bill.

Well, actually, your post kind a gives the impression that all that data is stored in the SIM card.
To my knowledge, the SIM card basically contains an ID# that identifies you to the network. If your contract has run out or you cancelled it, the SIM is no good for anyone. But I would still not give it away because of saved data like phone numbers, addresses, calender entries or whatever you saved on the phone, and hence, maybe on the SIM card...
