We employ a Disk-to-Disk-to-Tape backup system - important info on our servers and our entire home directory filesystem (which resides on an XServe RAID) are first backed up to another XServe RAID - that's where live recovery takes place unless someone needs really old data recovered. Once a month, the backup XServe RAID is backed up to tape. We keep 3 months of data on tape, one month live on the XServe RAID.
