Looks like a GREAT idea... wonder what they would look like?

I was thinking about getting stainless steal when I get this PRS refretted.

The ceramic should last a lot longer than steel ones would. I have a ceramic chef's knife and it keeps a sharp edge probably three times as long as my steel ones did.
