I just used the ones I could remember. Now that you mention it I remember some CD cases from Apple the had various colors of logos, I think it was the fruity iMac time.
And one more would be too much for 200 x 50 …

To be honest, I think it's very funny when we get a new guy/gal at the NN with a JUMBO animated sig.

I dont think the colors were ever actually part of the official logo. The logo is the shape, and the colors are whatever Apple feels like at that time.
A lot of Late 80s/early 90s macs came in boxes with solid red Apple logos.
My DuoDock II has an ugly dark brown logo, that just looks like a darker shade of the box. Actually the whole box is printed that way.

I do enjoy their logo now. Its quite modern. Still has the Apple feel. The rainbow apple was so 80's.

The colors were part of the logo. There was the fruity logo, there is monochrome (as you said, the logo was of in the color that was used on a box etc.), and now there is the glossy logo.
Almost two decades their machines had that fruity logo on it, so I'd really consider it part of the logo. But of course the shape is the essence and Apple does indeed filll it with what they seem to be appropriate.

The Rainbow was an overriding theme in the 80s, but...
If the glossy colors were an official part of the logo, then how come different colored solid logos are still found all over the place on Apple's website?
Why are all the Apple Developer Connection logos solid light grey, the logos at the iTunes and Store web sites seem to be solid white or black, and the main logo on apple.com is a solid dark charcoal color? In fact, the logos on all the Mac boxes are solid colors too, and the logo on all the products is some solid color.. and ther are SO many variations! I've never even noticed this until this thread, but I can't even find the glossy "official logo" (as you call it) anywhere except int he "About this Mac" dialog box!

Exactly, andreas, the multi-color logo was an official logo. It was trademarked that way.

BTW, I believe, all in all, we have a quite high sig quality on MacNN. I don't know any other forum so intensively, but from what I see, their users way too often suck at Teh Signatures…
And a big  for sig rules…

There is really only three Apple logos, the first drawed one, which was promptly replaced by the multicolor Apple. The bite out of the Apple is actually from the first logotype "apple computer". The boxes in the 80s and 90s were only monochrome due to prohibitly high printing costs (due to the colors and they being incredibly hard to print right with the technology of the day). It was officially changed to the monochrome logo in 1998.
Actually the "monochrome" can be anything, as it's only the shape that is the logo nowadays (as evidenced by Aqua-logos, glowing white logos, metal logos and chrome logos). Steve Jobs gave the reason for the change that "this is our 'swoosh'", referring to the Nike logo.
