First is a whole yellowtail snapper, served head to tail. Deboned, lightly battered and flash fried, stuffed with yellow rice, black beans and corn. The yellowtail sits in a tomato-garlic-ginger broth, and is finished with plantain chips for dorsal fin presentation. Fantastic.
Secondly, we have a churasco. 12 oz. strip steak, grilled to temp. Served with black beans and rice, with a cilantro sour cream drizzle over the black beans. Tomato mojo on the side, the entire dish topped with sliced red onions and sliced avocado.
Lastly we have the Painted Barramundi. This is a New Zealand grouper, served as a 7 oz. filet. Coconut-curry-kafir lime-lemongrass (touch of milk) served with two lobster/portobello ravioli.

Tonight I had chimichuri skirt steak (8 oz.), med rare with garlic mash pot, sauteed onions.
Around 2 am I'll have a french bread pizza.

Let them cool down before eating.
