If there was a way to get more games on an iPod, what do you think would be a great game? You'll need to take into consideration the clickwheel and stuff.
Here's my suggestion: Dark Castle!!!

I think trivia could really work well. Apple could make some sort of trivia shell game and then let people come up with packets of questions for the game that you could download. They could offer sets of trivia questions on iTunes.

Remember the "You Don't Know Jack" trivia games? I think these games would make a good fit with the iPods, if you could figure out how to have mult. buzzers/headphones...
