What is a good meal to make when you are alone? Not crap food- but something decent?
I'm tired of eating out.

bread with slices of tomato and onion (or what ever veggies you want) covered with cheese. broil a few minutes. simple fast meal.

That sounds great!
I like steamed brocoli with a little ranch dressing over it. Pasta (like spaghetti or angel hair) with a little butter and parmesan cheese over it is good too.
Salad-like meals work well. Take those same tomato and onion slices Gator mentioned, and add sliced (peeled) cucumber. For quick prep, use an off-the-shelf oil and vinegar dressing and soak the stuff in the fridge overnight. Serve cold and enjoy.
(I'm thinking summer foods here; there are other quick and simple meals for one that go better with cold weather.)

3 slices of bread and a little bit of peanut butter; combine as you see appropriate
1 cup cheerios, 1 banana, and 1/2 cup milk; mix to taste in a medium sized bowl

Plate of corn chips, two handfuls of shredded cheese under the broiler in the oven for a few minutes until the cheese just starts to brown. Add chopped tomatoes, jalapeƱos, lettuce, salsa, and sour cream or guacamole. And a beer.
We're talking 10 minutes tops.

Slices of tomatoes, put fresh mozzarella on top, then some balsamic vinegar or olive oil, and then leaves of fresh basil. Enjoy with french bread and butter.

OK now I'm getting hungry.
try this one, ghpoter you'll like this one.
onions saute with barbeque sauce (couple of teaspoons does the trick)
toast bread
coat toast with a light layer of mayo
layer with tomato slickes, cucumber slices
spoon on barbeque saute onion
I tried it with sprouts on top, but it can over powering.
think next time I make this one I'll cover it in cheese then broil it.
I like cheese

boiled broccoli...eat as is...yummy
maybe some rice...get the "in the bags" kind for less stress. maybe cook in the same pot as the broccoli
for protein, chicken breast fried in sesame oil
fry some eggs and maybe some shrimp mixed into it
for me, the less i have to do the better.

Can't go wrong with a good stirfry. Just chop up loads of vegetables - pretty much anything you can think of; mushrooms, broccoli, carrots, mange-toute, onions, peppers all good, add some noodles and a sauce, or just some soy sauce to flavour. Can put meat in too if you like - chicken breast is good or seafood. Can't go wrong, any idiot can cook one. Just need a good pan and a good heat.
