I have a used leather couch that I'd like to make darker, partly to cover a number of small stains. How do I do it? What category of product do I buy, and by what criteria do I choose one? Thanks

I can.
This guide is actually pretty good, although generic.
You need to know what type of leather you have before you even think about it. Choices are anilene, nubuck, protected-cheapo, etc. Protected stuff is run-of-the mill and is hard to match up color-wise because of the cheesy finish it has. Anilene shows all marks and scratches, so usually it's a matter of spraying translucent dye all over it for coloring (and not worrying about the scratches).
Tools involved include oil removers (prepping), dye (different for all types), a fine mist sprayer, patience, a dust-free environment, protective sprays (after dying), more patience. Most people would call a furniture tech with all the tools and expertice (AND WARRANTY) because it's a pain in the ass to get it right and have it hold onto the leather for much longer than a few months.
**I did furniture repair for 3 years during high school and we did some leather jobs. Techs will charge alot of money, but it may be worth it after you get to realize the hassles involved.**

Just want to say thanks to those who were helpful, you've set me on the right track. Also, this is a couch I got on craigslist for $75, so if anyone has any tips like "little known fact, you can use lemon juice as a cheap dye but the results aren't stellar," this would be the time

The correct route is the prepping and dyeing.
However, a little saddle soap and mink oil will clean and darken the whole thing to hide the stains with a lot less work. Not as great results, but then, the couch was $75.
Try in a non-obvious spot first.
