Why I've Decided I Hate Crawfish

Seems like there's no getting around 'mudbugs' as they are affectionately known here in Texas, but I gotta tell you ... lately, I've come to the conclusion that I really hate the critters and here are a few reasons why.
- People of Texas ... They're not shrimp (and never will be ... not that I'm all too fond of them either)
- They have a strangely chewy texture ...gross!
- They look awful fresh (boiled or steamed) and looking up off the plate at you ...ick!
- ... Oh yeah people, they're not shrimp.

The first time I had crawfish was in Biloxi, and they were cooked by a Thai lady. Does that tell you everything you need to know about how HOT and yet utterly delicious these mud bugs were? So with sweat pouring off of me, I ate 'em and loved 'em. Later, when offered crawfish that were not as "extremely" prepared, they were merely "very good". No, they're not shrimp, nor lobster, but they are both structurally and biologically very similar, and with proper preparation, they are very good.
Unfortunately, most people today think "Cajun" means "nuclear hot with no thought to actual flavor" and that often leads to changing textures and aromas through the use of way too much hot pepper, instead of having the food be full of flavor and with great textures-oh, and a bite as well. This is true of so-called Mexican food too, by the way.

Mmmm, reminds me of a delicious meal of Dragon Shrimp I had in Shanghai. Yummy!
Amusingly enough, a Google image search for dragon shrimp got me the same picture as the one houstonmacbro posted.

Crawfish are too much work to get at the meat inside. I prefer shrimp.

Just eat 'em whole.
Or, if you don't feel like doing that, pop them in your mouth whole, chew them up, and spit out the shell. Works fine.

I don't mind spiders, snakes, or anything else that most people hate. My only real fear in life are crayfish and lobsters. I just can't stand the look of them with all those long stick like legs. Never mind how they taste (although for the record, I have tried both).

I have a friend of mine who works in the industry and knows exactly when and where to buy them. He does a pretty good job (he's originally from LA, that may have something to do with it).
Otherwise, I don't touch 'em. Or shrimp, for that matter. My wife refers to all of it as "bait" but she's been known to eat a few Gulf shrimp.
Other than the Chesapeake, I've never seen anything like the seafood down here. It's a small give-back for the hurricanes.

Friend of a friend back in England owned a lake full of crayfish and trout. We fished us some trout, got some crayfish out of the traps and feasted. I love them.
