I replaced the flapper in the tank because it wouldn't close completely after each flush. Now it closes but doesn't stay open long enough for the bowl empty. I need to hold down lever to make sure everything goes down. How do I get the flapper to stay open long enough?

never buy just a flapper. buy a new kit that is a complete internal redo. make sure you get one for your size of toilet too (some toilets have space requirements when the lid is on, and the ball/float post may not fit). you probably bought a flapper that wasn't designed for you flushing mechanism or ball/float.

Adjust the chain or thing that is attached to the flapper.

To save water, some toilets don't dump all the water with every flush. If you need a heavier flush, you hold down the lever. Could that be it?

You need enough slack so that the flapper will float at the top of the water after you let go of the handle. Your handle is pulling it back down.

It sucks. Now we all have to flush many times and occasionally use a plunger.

I don't buy into Sheryl Crow's idea of saving toilet paper.

Nah, they flush exactly the same way if you hold it for 3-4 seconds. It makes a lot of sense to me. And it shouldn't have any influence on getting caught in the pipes.
