Why at foreign Apple Online Stores do they stock old equipment and new? For example, at the Czech store they still sell the last rev MacBook Pros alongside the new ones. There is some good savings to be had by getting the old one. Why don't they do this here in the US?

Most likely because Apple’s market share is higher in the US than most other places. The older items sell out faster in the US. There are probably other reasons, as well, but that’s one I can think of.

Because official Apple store are owned and operated by the mothership, while any other Apple stores (whether it bears the Apple logo, authorized reseller or whathaveyou) are just as disconnected from Apple as WalMart. There is no connection.
The official Apple stores don't have to keep old stock, while the un-official Apple stores have to sell their old stock when Apple releases something new. The official Apple stores are able to sell or make orders for any product Apple makes, while the un-official ones often have to wait weeks before even knowing what the price will be on that product.
If you think of the un-official Apple stores as something else than Apple stores, then it all makes more sense. Because they aren't Apple stores. They are Apple re-sellers. Thusly, they are as connected to Apple as any other store you can think of.

I could take Sean Connery in a fight... I could definitely take him.
