The guy is from SF. He's hoping that the recognizition from the competition will allow him to put a wood fired oven into one of his businesses.

It seems a little hard to believe that there is not a way to get 900 degrees in a oven from some method other than burning wood.
Anyway, yeah for America. I guess we can cook more than Big Macs.

I used to be a French bread baker and there was no American oven that would bake real French bread. Our ovens were imported from France and they were electric. Now, the best bread baker in town (the French bakery moved out) uses a wood-fired oven from Spain.
Just because American commercial ovens don't get hot enough, that doesn't mean that other imported ovens might not work just fine.
I sympathize with CA deciding to limit wood burning. I've been in Missoula in the winter, and Missoula is the poster-child for temperature-inversions. The wood-burning haze, exacerbated by the woodchip plant, was horrendous.

I have seen one of these monsters in a bakery here in Spain. They are very good those ovens.

Some of the best pizza I've ever had was in a shack in Brooklyn, just underneath Brooklyn Bridge. I forgot what it is called but it has won 'NYC's best pizza' many years in a row. Delicious, thin crust, burnt edges, simple toppings. Just thinking about it makes me want to go back.
