Apple wants to control the user experience and maintain their classy image, which you cannot do if people are doing "Simpsons" themes on their phone.

I really think they nailed it on the iphone. I see no need to improve the experience.
On OSX, there was a lot of inconsistencies in the interface that I once had time and care enough to do something about. I don't really care anymore, or those things that once bothered me don't bother me anymore.

I miss the leopard theme I had for my iphone while it was hacked. I unhacked it after they announced the SDK and updated the firmware.
It's not that I dislike the Apple theme, but I liked it to be more personal than just plain back backgrounds on the home screen.

On the other hand I am glad other phones support theming. So us people living in iPhone deprived zones (and still staying legal) can have slightly nicer looking phones.
