Headed to Nice, France!

I'm headed off soon for my first visit to the south of France. I'm sure there will be great food around every corner. Does anyone with a bit of knowledge of the area have any specific suggestions or recommendations? We'll be based in a rented house nearby Nice and will have full access to a car. I'm willing to drive or take the train pretty much any distance. We'll also be crossing the border into Italy for at least a one day trip, potentially longer.
Food? Wine? Must see attractions? Thanks.

Watch out for dog poop on the sidewalks. I seem to remember the French didn't have pooper-scooper ordinances (granted this was 10 years ago). I found it rather off-putting... there was crap everywhere.

Its the 'shame' of France, the dog shite everywhere. Dunno about Nice, but Lyon and Toulouse have a long way to go in educating dog owners.
I find a twelve gauge works well, but the police don't approve.

I stumbled upon a beautiful little town up on a hill west of Nice a bit called Biot. I thought I found something truly unique and away from it all, but at a pub one night I heard that twangy Boston accent from my old hometown. Sure enough the guy lived a few blocks from me. Small world got smaller.
