I know that this may sound strange, but I really donīt understand why it's possible to change the icons of some applications/folders and why others can't be changed.
For instance, if you try to change Address Book's icon, it would change the first time (though the new icon won't appear till you rebooted).
The icons of the /users/username can't be changed!! I want to use another icon...
The icons of the folders in my users can't be changed (Movies, Music, Documents, etc)
I know I can use Candy Bar, however I would like to know what's going on with icons and OSX??

I currently use CandyBar and most of my icons are changed. But, like you said, some of the application icons and others remain the same. I did go in and switched out the icon for Watson though. I went under Show Package Contents, then Resources, then manually switched out the (I think?) AppIcon.icns. I took the OmniWeb extra icons and put the globe in place of the Watson application icon on the dock. I followed the direction that came with OmniWeb's replacement icons. It just takes a little more time. Only the icon on the dock changed because I didn't switch out the other sizes. Confusing huh? I'm still relatively new to this GUI customization thing. You might want to check with the other guys in the GUI Customization forum

The icons you tried to change are hard-coded into the system. To change them you have to replace a resources file with a cutstom one. Apple did this so it would be easy for people to see which folder is which, and which ones are special (I assume).
