I have two of these hdi_gent processes that are simply eating up my processor time. And the memory they take up keeps on increasing!

Can anyone tell me what's going on?

It is the process that does the grunt work for Disk Copy. Since you are using Disk Copy, there shouldn't be anything to worry about.
