If you want to uninstall OS X

Just boot into OS 9. Trash the following folders:

System
Library
Applications (unless you have some carbon apps in there that you have been using)
All those lil' UNIX folders (usr, etc, var, tmp, ...)
Anything with "Mach" in it
In your OS 9 System Folder, take out everything with "Classic" in the name (Classic Support UI, etc...)

And keep the user folder.

*gasp* how anyone could do such a thing, I do not know

You can leave the Classic stuff in the OS 9 System Folder. It's not like it takes up much space and doesn't do too much harm.

One thing with video, it likes nice unfragmented contiguous space. OS X is made up of a lot of small files which fragments you disk. You will probably need to de-fragment your disk after removing OS X in order to get best performance out of it. If you don't have the tools it might be cheaper to buy a firewire disk to put the video on and not do the OS X deletion.
