Does anyone know of NSDocument, or TextEdit, is capable of altering the Line Spacing or doing I have to resort to AppleWorks?

You mean, like double spacing? text edit allows you to space by points.

Line spacing is points, really. For instance, if you want to double space with a 12 point font, you type "24" in the points box, you have double spacing.
