I know I can change my home location to a different folder and call it whatever I want by going in NetInfo and going to User>Home and typing in a new location.
My Questions is, what do I need to type in there if I want my home location on a different drive or partition?
You can do it the same way using net info. Just specify /Volumes/Partition-name/path/to/folder and you'll be set. Just leave any spaces that might be there alone. You don't need to escape them.
Your other option is what I do, which is to use a symbolic link in place of my /Users/username folder. Like so:
