What kind of difference do these cards make to general OS X responsiveness? I know that they are primarily geared towards making 3D games play extraordinarily well at high resolutions. I don't game that much, so I would be more interested in the cards that are best at squeezing the most performance out of X...a la Quartz Extreme.

Beyond that, anyone know if apps like Photoshop or Final Cut Pro benefit from better GPUs? I suspect those apps are CPU intensive, but I was wondering if OS X is smart about giving these cards a higher share of the burden to handle where graphics/rendering intensive apps are involved.
