Why would you when AppleTalk is built in?

One reason might be the 10-user login limit imposed by AppleFileServer on Mac OS X client. Successfully implementing netatalk on an OS X box could be a free opensource way to workaround this limit without investing $1k in Mac OS X Server Unlimited.

I'm sure how netatalk and appletalk would work together.

Yeah frankly, I'm not interested in netatalk in terms of AppleTalk. At this time, my interest lies only in running netatalk as a TCP/IP based AFP server. The point being that it would be an AFP daemon listening on TCP port 548 just like AppleFileServer does, but without the 10-user limit. Obviously, one wouldn't want to run AppleFileServer simultaneously with netatalk, but there would be no purpose in that anyway.
