OK,

I opened up System Preferences to add a new account when alas, the "Accounts" pane is gone! gone! gone!

Does anyone have any idea of what might have happened?

Corrupted cache file. Just delete ~/Library/Caches/com.apple.preferencepanes.cache.

Thanks! That worked. AppleTalk doesn't see printers anymore and my Help Viewer always crashes on launch. Can I delete all of my caches?

Yes. If that doesn't help, you can also try deleting the caches in /Library/Caches and /System/Library/Caches. If you do, reboot after you delete them.
