File extentions and associated Apps...

I recently downloaded HexEdit but it seems to have hijacked some of my file extentions and wants to be the associated application to open it. As an example, .dmg and .bin will automatically open with HexEdit. If I delete it, the files automatically go back to Disk Copy and Stuffit Expander. Is there a way in OS X that I can change my file association types?

Select a disk image in the Finder, chose the menu File->Get Info, expand the Open with panel in the info dialog, chose the application you want this file to be opened with, then press the Apply to all button, to apply this setting to all disk images.

You can also right/conrtrol click on a file and when the contextual menu pops up, hold down the option key and the 'Open with...' command will turn into 'Always open with...'

That particular trick only makes the selected file change associations so if you have other files of the same type you prefer to open in another app, you can quickly change the association...

I've been using Macs for my entire life and knew OS 9 inside and out, but only been in X for a couple months now, still learning all the tricks.
