I assume you mean on the boot panel when your Mac is starting up?
Guess #1: (In the form of a question, ala Jeopardy) Do you have journaling enabled?
Guess #2: Check your /Library/StartupItems and /System/Library/StartupItems for anything that you think shouldn't be there. /Library/StartupItems should be empty unless you have installed anything that needs to start before you boot up (ie servers of some kind). Here is a list of stuff in my /System/Library/StartupItems:
Code:
Accounting/ CrashReporter/ NetInfo/ Samba/
Apache/ Cron/ Network/ SecurityServer/
AppServices/ DirectoryServices/ NetworkExtensions/ Sendmail/
AppleShare/ Disks/ NetworkTime/ SystemLog/
AppleTalk/ IPServices/ Portmap/ SystemTuning/
AuthServer/ LDAP/ PowerLogix Startup/ mDNSResponder/
BIND/ LoginWindow/ PrintingServices/
ConfigServer/ NFS/ RemoteDesktopAgent/
CoreGraphics/ NIS/ SSH/
Those are all the stock OS X startup items, with the exception of PowerLogix Startup and RemoteDesktopAgent.
