Hardware:
G3 either Beige of B&W (don't know yet, but think I'll have a beige on hand).

Software
Looking at evolving it into a file server.

I'm looking to use Mac OS X as a lean mean file server. I want to be able to access files on a Mac and PC, I guess NFA is the way to go?

I also want to restrict users to respective directories on the system.

Want to keep it lean as possible. Is there a way to disable the GUI on boot rather than login as >console? Would perfer to cut the bloat as much as possible.

I know how to run os x , my question is how to disable login on the physical computer (except for a specified admin)... and how I can move the user directories to another drive...

Macintosh HD - System Drive
User1 - Users folders

Well, Darwin is free. With Darwin, there is no Aqua.

If you want your Users' home directories to be on another drive, you can either mount that drive to /Users, or you can change the home directories with Net Info.

Anyone know how to restrict shell/UI login access?

I want to allow the admin (me) to login via the UI, and via shell...

but don't want anyone else to be able to...

Though I still want everyone to be able to share files obviously.

Set their shell in NetInfo to /sbin/nologin
