Does anybody know if there is a way to add to multisession CDs (created via Adaptac CD creator on a PC)? Does toasts do this?
This is a the biggest complaint I get from PC users regarding burning a CD.

Yes, I know I could buy a PC, but why?

Roxio's Toast product for Macs does this and virtually any other CD writing options you could want. Apple's framework in the OS is pretty much only a basic CD burning technology (though you can encypt them I think with the Disk Copy utility).

Yep, toast is the way to go. Simply use it like a nornmal (blank CD) in Toast, then click burn. A dialog will come up, select 'burn session' (not burn disc)

Disky Copy also allows for multi-session burning onto 1 CD
The only difficulty is that you must remember which CD's have space for the future session - as I am not aware of a Mac app that will advise how much space is left - other than a trial attempt and being advised there is not enough space

Yup, no need to get Toast - Disc Burner does this. Search Apple's knowledge base for an directions.

No, but will it do it to CDs already created and used on a PC? A lot of people that I have converted to Macs want to be able to go back and forth from the PC to Mac by adding files to a CD-R or CD-R/W.

Yes, if the disc was burned multisession on both machines, you should be able to do this.
While it is possible to burn multisession discs with Disk Copy, it's much easier to do so in Toast, and on top of this Toast has an interface which is similar to Easy CD Creator's. So, it's probably the best solution for your clients.
