Ok, I know I'm being a dope but I just can't find it. How do I stop iTunes from trying to copy everything to my iPod when I plug in the iPod?

Expand the iTunes window.

Click on the iPod icon in the lower right hand corner.

Click on "Manually manage songs and playlists".
