Is there a way to copy colors from one document to another in Illustrator? I tried using the eyedropper tool, but it only seems to work within a document.

Are you trying to copy a whole range of colors, or just one color? If just one color, you can just make a rectangle, fill it with a color, and drag it over to the new document. Use the eyedropper there to add it to your swatches.

I was actually trying to copy colours from one document to the other yesterday and I'm sure there must be a way of doing that - however I also had to revert to copying an object with that colour from one document to the next
Does it not use OS X's system-wide colour picker? If so then you could try using the 'magnifying glass' which lets you pick a colour from anywhere on the screen.
