After installing 10.2.5, classic apps are unable to display menus; unable to display text in dialogs; and unable to display graphics in photoshop windows.

I re-installed using the combo installer. After doing that, the problem went away -- for a while. Then the problem returned. Rebooting seems to fix it for a while.

Since I still use several classic apps, my only choice is to reboot several times per day, or else try to revert to 10.2.4.

Anyone else seeing this? G3/500 Pismo powerbook, plenty of ram.

Try to reinstall classic. That should not need too much effort. Maybe that helps.
